Here is the recipe for the Spicy Pumpkin Squares I made for Thanksgiving. Amanda specifically asked for it, so I hope she sees this!

I got this recipe out of the Indianapolis Star newspaper many years ago.

Spicy Pumpkin Squares

1 spice cake mix

1 1/4 c. quick oats (I used old fashioned oats...I gate quick oats. ??)

1/2 c. butter, softened

1/4 c. brown sugar

1 egg

1/4 c. chopped pecans

Filling:

1 can (15 oz.) pumpkin

1 can (14oz.) sweetened condensed milk

2 eggs

1 t. cinnamon

1/2 t. ginger

1/2 t. nutmeg

1/2 t. salt

Preheat oven to 350. Beat together spice cake, oats, butter, brown sugar and egg until crumbs form. Reserve 2 c. and press the rest into the bottom of a 13 x 9 pan. Bake 15 minutes. Add pecans to the reserved crumbs and set aside. (I put the nuts on top instead...)

Beat pumpkin, condensed milk, eggs, spices and salt. Spread over baked crust. Top with reserved crumbs. Bake 35 minutes or until golden brown (mine never did really turn "golden brown" but it didn't matter...)

Serve warm or chilled with whipped cream. Refrigerate leftovers. If there are any.
